Spiced Baked Apple | Recipe
A dessert that delights in autumn and already hints at winter. Fragrant, warm and festive – perfect as a sweet highlight outdoors on the OFYR or shared at the table indoors.
Preparation
Prepare the OFYR with pizza oven
Light a fire with dry hardwood and heat the pizza oven evenly. To test the temperature, sprinkle a little flour onto the stone: if it turns brown quickly, the oven is ready.
Ingredients for 4 people
Apples & spiced stock
- 4 flavourful apples (e.g. Cox Orange, Boskoop, Jonagold or Elstar)
- 2 cinnamon sticks
- 2 star anise
- 2 cardamom pods
- 6 strands of Swiss saffron
- ½ espresso spoon chopped rose petals (from the pharmacy)
- 1 tsp rose water (from the pharmacy)
- 1 organic orange, juice and zest
- 2 tsp honey
- 120 ml hot water
Filling
- 60 g ground almonds
- 45 g icing sugar
- 1 egg
- 30 g melted butter
Garnish
- 1 tsp chopped pistachios
- Spices from the baking dish
- Lightly chopped rose petals
- Almond–orange Florentines
Method
- Wash the apples, peel the upper third and remove the cores. Score lightly in a spiral around the apples.
- Mix the ingredients for the filling, spoon into the apples and heap a little on top.
- Place the filled apples in a baking dish or small cast-iron pots.
- Add the cinnamon, star anise, cardamom, saffron, orange juice and zest, honey, rose petals, rose water and hot water.
- Place the dish in the OFYR pizza oven and bake for about 45 minutes until the apples are tender, the filling is golden and the stock has thickened slightly.
- Arrange the apples on plates, sprinkle with pistachios and garnish with rose petals, the spices from the dish and almond–orange Florentines.
- Pour the spiced stock around the apples. Serve with Fior di Latte ice cream if desired.
